Incredible Blueberry Muffins

Ingredients:

  • 2 cups flour
  • 3/4 cup sugar
  • 2-1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 3/4 cup milk
  • 1 egg
  • 2 cups blueberries, fresh or frozen

Topping:

  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup soft butter or margarine

Instructions:

  1. Preheat your oven to 375°F and prep muffin pan with liners
  2. In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.
  3. In a 2-cup glass measurer, combine vegetable oil, milk, and egg. Beat with a fork until the egg is blended with the milk.
  4. Pour the liquid ingredients into the flour mixture. Stir just until the flour disappears.
  5. Fold in the blueberries.
  6. Pour the batter into the muffin pan with liners
  7. In a small bowl, mix together the sugar, flour, cinnamon, and butter until crumbly.
  8. Sprinkle the topping over the blueberry batter.
  9. Bake in the preheated oven for 25-30 minutes or until a wooden pick inserted in the center comes out clean.
